Banana bread

Making banana bread is super easy and it's the perfect solution for whenever you have ripe bananas at home. I believe knowing how to make banana bread is a must! Just because it is a finger-licking and mouth-watering breakfast.


This recipe is perfect to make it whenever and wherever!

When mashing the bananas you can use a fork or a mixer and decide if you want some banana chunks in it or not. If not, I recommend mashing the bananas in a separated bowl and later on adding it to the rest of the mixture.

INGREDIENTS:

  • 2 eggs

  • 1/2 cup melted coconut oil

  • 1/4 cup milk of choice

  • 1 cup mashed ripe bananas (2-3 bananas depending on its size)

  • 1 3/4 cups oat flour (other types of flour also work)

  • Cinnamon to taste

  • 1/3 cup honey or maple syrup

  • 1/2 tsp salt

  • 1 tsp baking soda

  • Chocolate chips to taste

  • Walnuts to taste


INSTRUCTIONS:

  1. Preheat the oven to 180ºC. Prepare a loaf pan and set aside.

  2. In a bowl combine the flour, baking soda, cinnamon and salt.

  3. In another bowl mash the bananas and mix with the eggs (see note), oil, milk and honey. Then add the flour mixture.

  4. Finally add the walnuts and chocolate chips.

  5. Add the stiff egg whites slowly with a big spoon and mix it until well combined.

  6. Bake for 45 minutes or until a toothpick inserted coms out clean. Let it cool before serving!

Note: When adding the eggs, I always divide the egg whites and the yolk. The yolk goes directly into the mixture but before adding the egg whites I beat them until stiff because it gives a spongy texture to the cake or bread.
