Nourish bowl

Don't you think having all food together in a bowl is x1000 times better than having it separate in a normal plate? Because I do! Which is why I decided to share this nourish bowl recipe with you.


If you are looking for a balanced, nutritious, delicious and easy meal idea to make, this is what you need.


Great for lunch, dinner and meal prep!

No Recipe Needed: one of the things I most love of these bowls is that they are so versatile and do not require a recipe. You can use whatever is in season or what is on special – the choice is up to you!



With this recipe you can get inspired to make the bowl you most like.

INGREDIENTS:

  • 1 cup cauliflower rice.

  • 1 cup cooked chickpeas.

  • 1/4 cup pumpkin seeds.

  • 1/2 sweet potato.

  • 1/2 shallot or onion.

  • A bunch of parsley.

  • 1/2 avocado.

  • Hemp seeds.

  • 1 tbsp Coconut oil.

  • Olive oil.

  • Salt.

  • Pepper.

  • Curcuma.

INSTRUCTIONS: 

  1. Preheat the oven at 180ºC.

  2. Peel the sweet potato and cut it into squares. Put it into a baking pan and drizzle some oil, salt and pepper on to it (mix it so that it is everywhere).

  3. Put the sweet potato squares into the oven and when they are soften, add the pumpkin seeds on top. Now bake for some more minutes until the sweet potato squares start to get golden brown.

  4. While the sweet potato is in the oven, cut some cauliflower florets and put them into the a food processor.

  5. Cut 1/2 shallot into small pieces.

  6. Heat a pan on high temperature, add some olive oil and add the shallots into it. After more or less 1 minute, lower the heat to medium.

  7. Heat another pan on medium-high temperature and add the coconut oil. Next, you can add the cauliflower rice together with the curcuma, the parsley, salt and pepper (to taste).

  8. Now you can start creating your bowl. Add all the different ingredients you cooked and finally, add 1/2 avocado and some hemp seeds on top.

  9. Enjoy! And remember you can change the ingredients in any way you want.
