Sweet potato omelette

Mmmm I was craving a typical potato omelette and when I wanted to start cooking I saw I only had sweet potatoes... So I decided to try something new and made a sweet potato omelette!

It has this mix between sweet and savory taste and it is just perfect. I didn't think it would be so nice and can say I was surprised with the first bite.


Different and amazing!


INGREDIENTS:

  • 1 sweet potato

  • 2 chives

  • 3 eggs

  • Salt

  • Black pepper

INSTRUCTIONS: 

  1. Preheat the oven at 200ºC.

  2. Slice the sweet potatoes into thin medallions and put them into a bowl (oven safe).

  3. Mix the sliced potatoes with oil and salt and finally add a finger of water to get them softer.

  4. Cover the bowl of the potatoes with foil and put them into the oven.

  5. While the potatoes are in the oven cut the chives and cook them in a pan at low-mid heat.

  6. Mix 3 eggs in a small bowl with salt and black pepper.

  7. Once the chives are cooked, add them into the eggs. And once the potatoes are also soft, also add them into to the bowl with the eggs.

  8. Heat a pan with some oil, put the entire mix in it and cover it.

  9. Let it cook at low-mid heat until you can flip it without any of it falling out. When it is flipped turn off the heat and let it sit for about 1 minute.

  10. Finally, serve and ENJOY!
