You think Poke Bowls are difficult to make? Well...NO! Plus, the beauty of poke bowls is that it's totally customizable. You can choose whatever you like the most! However, I think the combination of my Summer Poke Bowl is one of the best!

Poke is a dish traditionally made with fresh raw fish, BUT as I said, you can totally personalize it as you want with whatever you have in your fridge!
This recipe is made with basmati rice, but again, use the one you like the most!

INGREDIENTS:
1/2 cup rice
1/2 tsp salt
1 cup water
1 carrot
1 cup spinach
1/2 zucchini
3 mushrooms
5 cherries
Hummus to taste
INSTRUCTIONS:
Start by heating some oil in a medium saucepan, add the rice and then add 1 cup of water and some salt to give it more taste. Let it cook until the water has been absorbed.
While the rice is cooking, prepare your veggies and cook them in a medium skillet. You can add whatever species you want to make it even more tasteful. Also, don't forget to prepare your hummus.*
When the rice is done, take a bowl and start creating. First of all add the rice as a base and on top of the rice add all your other ingredients and finally put the hummus on top of everything.
Finally, eat and ENJOY!
