Today I woke up craving pancakes and what better than healthy pancakes?! This fluffy banana chia pancakes will make your day! I LOVE them and I promise you will LOVE them too!!

Banana pancakes are normally just made with banana and eggs BUT in this recipe I added chia seeds to add some health benefits and I also used some baking powder which is the ingredient that makes them grow a little bit and it is also what makes them so fluffy and of course even more DELICIOUS!

Some tips to make the BEST pancakes ever
So that your pancakes become the best ones try using a thin spatula and wait to flip them until the first side cooking is golden brown. Also keep in mind to make them small and in that way it will be even easier to flip them!

This pancakes are AWESOME! On their own they are already delicious but if you want you can add even more flavor with different topping such as walnuts, chocolate chips, honey, cottage cheese, jam, peanut butter...

INGREDIENTS:
1 ripe banana
2 eggs
1 1/2 tbsp chia seeds
1 tsp baking powder
Cinnamon (optional)
INSTRUCTIONS:
Break the banana into small pieces and mash it with a fork or a food processor.
Pour the eggs, chia seeds and baking powder to the mashed banana and stir until completely combined.
Add your own flavorings. I used cinnamon since I love it and use it for everything! Other examples could be chocolate powder, vainilla, honey...
Heat a pan over medium-high heat adding a bit of oil so that the mixture doesn't stick to the pan.
Now everything is ready to pour the batter into the pan (more or less 2 or 3 tbsp) and let both sides cook until it turns light brown.
Serve warm and with some extra toppings. I used honey and cottage cheese but feel free to use whatever you like the most.
