Carrot cake bliss balls

These carrot cake bliss balls taste like heaven and of course they are healthy! No oil and thanks to the dates they taste sweet. Oh and even more, they are vegan.

These tasteful and soft bliss balls can be eaten during the hole day whenever you want. They are perfect as a dessert, before a workout, after a workout, in between meals... Also, they are super easy to make, it's just mixing all the ingredients, forming some balls, let them cool and eat! So, there is no excuse to not make them... go ahead and start making yourself some delicious snack!!

INGREDIENTS:
1 cup pitted medjool dates soaked in warm water for 10 minutes
1 cup grated carrot
1/2 cup pecan nuts
1/3 cup coconut flour
1/4 cup smooth peanut butter
1/4 cup desiccated coconut
INSTRUCTIONS:
Mix the dates, carrot, pecan nuts, coconut flour and peanut butter all together and blend until a thick 'dough' forms (If it is too sticky, add more coconut flour).
Divide the dough and form balls. Try to make them even-sized. Then, roll the balls into the desiccated coconut.
Let it chill in the fridge for at least 40 minutes and enjoy!
