What do you think about making something different than usual? As soon as I found out about this carrot jam I just had to make it and omg it's delicious!

It's delicious and very versatile. You can use it to accompany your pasta, fish or meat, mix it with yogurt or spread it on a toast, which is how I like it the most.
Easy to make and you can also Batch Cook it!

INGREDIENTS:
5 carrots
1/2 tsp honey (if you want it sweeter add more)
1 tsp of lemon juice
1/4 tsp cinnamon or more to taste
1/4 tsp fresh ginger
INSTRUCTIONS:
Boil the carrots in water until they are soften, when they are done let them cool to touch.
Once they are cooled we put them in a bowl together with all the other ingredients and shred them until well combined.
Finally, if you want the texture to be smoother you can add a bit of water.
Put in a jar and keep in the fridge!
