Coconut macarons

First recipe of 2021!! Coconut macarons, so simple and so delicious... After all those big meals with family and friends many think about starting a diet buuut, as you all know b.healthy is about a lifestyle not a diet and this macarons fit perfectly in it!!!

Personally, I love to eat this macarons with my tea after lunch or after my dinner, it's the perfect sweetness to end your meal with.


Life is short, don't waste your time eating bad food!

CUISINE: COCONUT MACARONS


INGREDIENTS:

  • 4 egg whites

  • 1/4 tsp salt

  • 1/4 tsp coconut oil

  • 3 tbsp honey

  • 2 cups shredded coconut

  • 1/2 cup melted chocolate

  • 1 tbsp coconut oil

  • Salt to sprinkle on top.

INSTRUCTIONS: 

  1. Preheat the oven at 180ºC and prepare a baking sheet with parchment paper.

  2. Start by mixing the egg whites, salt, coconut oil and honey. Once this is well mixed add the shredded coconut until well combined.

  3. When you have your mix prepared, make small balls and place them on the baking sheet. On the baking sheet smash a little bit the coconut balls wit your hand so that they are flatter.

  4. Put them into the oven for 20 minutes or until they are golden brown on top.

  5. When you get the macarons out of the oven place them for 10 minutes into the freezer.

  6. While waiting, melt some chocolate together with 1 tbsp coconut oil.

  7. Get the macarons from the freezer and cover the bottom with the melted chocolate. You can also drizzle a bit on top. Finally, sprinkle some salt on top of the macarons.

  8. Let them some time in the fridge so that the chocolate gets hard.

  9. Enjoy!
