Falafels

Who more loves falafels? I am addicted and make them for any occasion. Most of the times if I have some lunch or dinner with friends I propose to make some because they are just delicious and irresistible!!


Not only they taste delicious but they are also super easy to make and if you are a chickpea lover you will definitely love them. Remember to make some yogurt sauce to dip the falafels... It makes them even more irresistible...!  

This falafels are baked instead of fried, so they contain less fat, they are also gluten-free and vegan. Don't you think it's time to start making some falafels?

 

Don't forget to add spices to have that extra final touch!

INGREDIENTS:

  • 500gr chickpeas (previously cooked)

  • 1 small onion

  • 2 cloves garlic

  • 1 tbsp cumin

  • 1/4 tsp cayenne pepper

  • Black pepper to taste

  • 1 1/2 tsp salt

  • 1/2 lemon juice

  • 1/4 cup chickpea flour

  • 2 tbsp tahini

For the yogurt sauce:

  • 1 yogurt

  • Cucumber

  • 1 small clove garlic

  • 1 tbsp lemon juice

  • 1 tbsp chopped parsley

  • 1/2 tsp cumin


INSTRUCTIONS: 

  1. Preheat oven to 180ºC. Prepare a baking sheet parchment paper.

  2. Heat the olive oil in small frying pan over a medium heat. Add the onions and cook until softened and starting to brown. Remove from the heat and leave to cool.

  3. Put the chickpeas, onion, garlic, cumin, cayenne pepper, black pepper, salt, lemon, flour and tahini in a food processor and mix until well combined but not completely smooth, we want to leave some texture.

  4. Finally, divide the mixture and form some patties (try to make them all the same size). Place them on the baking sheet and spray some oil on them.

  5. Let them cook for 20 minutes and then turn them around and let them bake for 10 more minutes or until golden brown.

  6. While the falafels are in the oven, make the yogurt sauce. Cut the cucumber into small pieces, mix it into the yogurt and then add the lemon juice, cumin, chopped garlic and chopped parsley. Store it in the fridge until you eat it.
