Gluten free apple tart

As some of you know, i'm from Holland and apple tart is a must in Holland. As I currently cannot eat gluten I thought of making a Gluten free apple tart!

It's soft and crumbly just perfect for a breakfast, dessert or whenever you want... It's also a great idea for when you need a special dessert during festive days, christmas is coming so, maybe this is what you are looking for?


There's the possibility of a vegan version!

INGREDIENTS:


For the dough:

  • 3 cups almond flour

  • 1 cup tapioca flour

  • 1 tbsp brown sugar

  • A pinch of salt

  • 10 tbsps butter or coconut oil

  • 1 egg (flax egg for vegan version)

For the filling:


  • 4 golden delicious apples

  • 1/2 cup brown sugar

  • 1 tbsp cinnamon


INSTRUCTIONS: 

  1. Combine the almond flour, tapioca flour, brown sugar, salt and butter in one bowl. Blend until well combined.

  2. In another small bowl, whisk the egg and then add it to the dry ingredients. Mix it all together.

  3. Divide the dough into two equal pieces and form round discs. One for the bottom and the other one for the covering. Wrap both discs into plastic and refrigerate for at least 1 hour.

  4. When ready, preheat the oven at 200ºC.

  5. Roll out one of the dough discs in between two sheets of parchment. Lay the dough into a pie dish, if it breaks just press it back with your fingers. While preparing the filling place it in the fridge.

  6. Place the sliced apples in a bowl and mix it with the brown sugar and cinnamon. Then get the prepared dish with the bottom crust and fill it with the apples.

  7. Roll out the second dough disc in between two sheets of parchment making a circle. Cut into strips to cover the apple filling. Be careful not to brake them.

  8. Finally, place the apple tart into the oven for 15 minutes at 200ºC and then reduce the heat at 180ºC for 40 minutes or until the pie is golden brown on top. (If the crust gets brown to quickly and the apples are not tender yet, cover it with foil)

  9. Let it cool more or less for an hour, serve it a bit warm and add some vanilla ice cream or whipped cream if desired. Enjoy! (Keep leftovers in the fridge)
