Gluten-free cereal cookies

I love some cereal mixed with my morning chia pudding or even easier, in my milk or yogurt...Whatever, these gluten-free cereal cookies taste good with anything. I won't lie sometimes I even eat them as a snack as a normal cookie!

Making your own cereals allows you to have control of the ingredients in them which means no extra sugar or any additives and they still taste sweet. You don't need to much to make them, only time, since rolling the little cookie dough balls takes time.

INGREDIENTS:
1/2 cup coconut oil
1/4 cup honey, maple syrup or brown sugar
1 flax egg (1 tbsp ground flax seed + 3 tbsp water, let sit for 10 min)
2 cups gluten free flour
1/4 tsp salt
1/2 tsp baking soda
1/2 cup mini chocolate chips
Anise extract to taste (optional)
INSTRUCTIONS:
Preheat oven to 200ºC. Line 2 baking sheets with parchment paper and set aside.
In a bowl mix the coconut oil, maple syrup and anise extract. Add the flax egg and combine until well mixed.
Add the flour, baking soda and salt, beat until well combined.
Stir in the chocolate chips.
Now roll the dough into small balls (about 1/2 tsp sized) and place them on the prepared baking sheets (1 cm apart from each other). Slightly press down into a cookie shape.
Bake for 9 minutes until the cookies start to brown. If you want them more crunchy let them bake for some more minutes.
Remove from the oven and let cool completely. Store in an airtight container up to a week or two.
